Artichoke and Provolone Sandwiches
A quick and healthy sandwich packed with artichokes, provolone cheese, and fresh veggies. Perfect for a light lunch or snack!
Ingredients
- 1/4 cup thinly sliced red onion, separated into rings
- 1 (14-ounce) can artichoke hearts, rinsed and coarsely chopped
- 1 medium tomato, seeded and diced
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon dried oregano
- 1 (16- to 20-inch) whole-grain baguette
- 2 slices provolone cheese (about 2 ounces), halved
- 2 cups shredded romaine lettuce
- 1/4 cup sliced pepperoncini (optional)
Instructions
- Place the onion rings in a small bowl and cover with cold water. Set aside while preparing the remaining ingredients.
- In a medium bowl, combine the chopped artichoke hearts, diced tomato, balsamic vinegar, olive oil, and oregano. Mix well.
- Cut the baguette into 4 equal lengths. Split each piece horizontally and remove about half of the soft bread from each side.
- Drain the onions and pat them dry with a paper towel.
- To assemble the sandwiches, divide the provolone cheese among the bottom pieces of baguette.
- Spread the artichoke mixture over the cheese and top with the drained onions, shredded lettuce, and pepperoncini, if using.
- Cover with the baguette tops and serve immediately.
