Ingredients
- 1 cup cooked chicken, chopped
- 2 Tbsp sour cream or cream cheese
- 1/2 cup shredded mozzarella cheese
- 1 Tbsp fresh basil, chopped
- 2 Tbsp arugula, chopped
- 1 scallion, chopped
- 1 garlic clove, minced (optional)
- Black pepper, to taste
- Salt, to taste
- 4 olives, pitted and chopped
- 1 tomato, sliced (optional)
- 4-5 slices of bread
Instructions
- In a small bowl, combine the cooked chicken, sour cream (or cream cheese), basil, arugula, scallion, garlic (if using), black pepper, olives, and mozzarella. Mix well and add salt to taste.
- Spread the chicken salad mixture on 2 slices of your favorite bread. If desired, place a slice of tomato on one of the bread slices before pressing the two slices together.
- To toast the sandwich, use a waffle maker, sandwich maker, or panini toaster. Alternatively, you can toast it in a non-stick skillet with a little olive oil. Cook until golden brown, about 5 minutes.
- Once toasted, slice the sandwich in half to create two chicken salad melts. Allow them to cool slightly before serving, then enjoy!
