Ingredients

  • 1 cup cooked chicken, chopped
  • 2 Tbsp sour cream or cream cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 Tbsp fresh basil, chopped
  • 2 Tbsp arugula, chopped
  • 1 scallion, chopped
  • 1 garlic clove, minced (optional)
  • Black pepper, to taste
  • Salt, to taste
  • 4 olives, pitted and chopped
  • 1 tomato, sliced (optional)
  • 4-5 slices of bread

Instructions

  1. In a small bowl, combine the cooked chicken, sour cream (or cream cheese), basil, arugula, scallion, garlic (if using), black pepper, olives, and mozzarella. Mix well and add salt to taste.
  2. Spread the chicken salad mixture on 2 slices of your favorite bread. If desired, place a slice of tomato on one of the bread slices before pressing the two slices together.
  3. To toast the sandwich, use a waffle maker, sandwich maker, or panini toaster. Alternatively, you can toast it in a non-stick skillet with a little olive oil. Cook until golden brown, about 5 minutes.
  4. Once toasted, slice the sandwich in half to create two chicken salad melts. Allow them to cool slightly before serving, then enjoy!
