  • 2 pickled cherry peppers, thinly sliced
  • 1 small heirloom tomato, sliced
  • ½ cup packed spring mix salad greens

Instructions

  1. In a small bowl, combine 2 tablespoons yogurt, 2 tablespoons cream cheese, and 1½ tablespoons pesto. Stir until smooth.
  2. Place the toasted bread slices flat on a cutting board. Rub the garlic clove on the top side of both slices until evenly coated.
  3. Spread the yogurt mixture evenly on both slices of bread (about 2 tablespoons each).
  4. In a medium bowl, combine the artichoke hearts, shaved asparagus, olive oil, and 1 teaspoon of pickled pepper brine. Toss until coated.
  5. Arrange the tomato slices on top of one toast slice, then layer with the artichoke mixture, spring mix, and sliced pickled peppers.
  6. Top with the second toast slice, yogurt-side down. Cut in half diagonally and serve.
