Ingredients
- 4 ounces frozen chopped spinach, thawed and squeezed dry
- 1 cup chopped canned artichoke hearts, patted dry
- 3 ounces cream cheese, at room temperature
- ¾ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ¾ teaspoon garlic powder
- ¼ teaspoon ground pepper
- 8 slices whole-wheat sandwich bread
- 3 tablespoons extra-virgin olive oil, divided
Instructions
- In a large bowl, combine the spinach, artichokes, cream cheese, mozzarella, Parmesan, garlic powder, and pepper. Mix well.
- Spread about ½ cup of the spinach mixture onto 4 slices of bread, then top with the remaining 4 slices to form sandwiches.
- Heat 1 ½ tablespoons of olive oil in a large skillet over medium heat. Add 2 sandwiches and cook until crispy and browned, about 3 minutes.
- Flip the sandwiches and cook for an additional 2-3 minutes, adjusting the heat as necessary, until the cheese has melted and the filling is hot.
- Repeat the process with the remaining oil and sandwiches.
