Steamed Artichokes with Herb Aioli

Ingredients

  • 4 large artichokes (about 2 1/2 pounds)
  • ½ cup mayonnaise
  • 1 ½ tablespoons chopped fresh herbs (chives and/or parsley)
  • 1 ½ teaspoons lemon juice
  • ¾ teaspoon Dijon mustard
  • 1 small clove garlic, grated
  • ⅛ teaspoon salt
  • Pinch of ground pepper

Instructions

  1. Cut off the top inch of leaves from each artichoke.
  2. Remove the outer layer of small, tough leaves from the stem end.
  3. Snip all remaining spiky tips from the outer leaves and discard the stems.
  4. In a large pot fitted with a steamer basket, bring 2 inches of water to a boil.
  5. Add the prepared artichokes to the pot, cover, and steam until tender, about 30 to 35 minutes, adding more hot water as necessary.
  6. While the artichokes are steaming, whisk together the mayonnaise, chopped herbs, lemon juice, Dijon mustard, grated garlic, salt, and pepper in a small bowl.
  7. Serve the steamed artichokes warm with the herb aioli on the side.
