Ingredients

  • 1/4 cup thinly sliced red onion, separated into rings
  • 1 (14-ounce) can artichoke hearts, rinsed and coarsely chopped
  • 1 medium tomato, seeded and diced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1 (16- to 20-inch) whole-grain baguette
  • 2 slices provolone cheese (about 2 ounces), halved
  • 2 cups shredded romaine lettuce
  • 1/4 cup sliced pepperoncini (optional)

Instructions

  1. Place the onion rings in a small bowl and cover with cold water. Set aside while preparing the remaining ingredients.
  2. In a medium bowl, combine the chopped artichoke hearts, diced tomato, balsamic vinegar, olive oil, and oregano. Mix well.
  3. Cut the baguette into 4 equal lengths. Split each piece horizontally and remove about half of the soft bread from each side.
  4. Drain the onions and pat them dry with a paper towel.
  5. To assemble the sandwiches, divide the provolone cheese among the bottom pieces of baguette.
  6. Spread the artichoke mixture over the cheese and top with the drained onions, shredded lettuce, and pepperoncini, if using.
  7. Cover with the baguette tops and serve immediately.
