Artichoke & Salami Chicken Bake

Ingredients
- 3 tablespoons extra-virgin olive oil, divided
- ⅓ cup chopped marinated artichoke hearts
- ⅓ cup chopped salami
- ¼ cup chopped pepperoncini
- 2 tablespoons red-wine vinegar
- 1 tablespoon chopped fresh oregano, plus more for garnish
- 1 pound chicken cutlets
- ½ teaspoon ground pepper
- 2 ounces fresh mozzarella cheese, thinly sliced
Instructions
- Preheat the broiler to high.
- In a medium bowl, mix 2 tablespoons of olive oil, artichoke hearts, salami, pepperoncini, red-wine vinegar, and oregano.
- Heat the remaining 1 tablespoon of olive oil in a large broiler-safe skillet over medium-high heat.
- Sprinkle the chicken cutlets with pepper and add them to the skillet. Cook for about 3 minutes or until starting to brown.
- Flip the chicken, and top each piece with the artichoke mixture and mozzarella cheese.
- Transfer the skillet to the oven and broil the chicken for an additional 3 to 4 minutes, or until the cheese is browned and the chicken reaches an internal temperature of 165°F.
- Serve the chicken with any pan drippings and additional oregano, if desired.
