Ingredients

  • 1 (10 ounce) package frozen spinach, thawed
  • ½ cup chopped canned artichoke hearts, rinsed
  • ½ cup shredded Monterey Jack cheese
  • 2 ounces reduced-fat cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon minced shallot
  • 1 large clove garlic, grated
  • 1 pound chicken cutlets
  • ½ teaspoon ground pepper
  • ⅛ teaspoon salt
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons grated Parmesan cheese

Instructions

  1. Squeeze as much water from the thawed spinach as possible, then place it in a medium bowl.
  2. Add the artichoke hearts, Monterey Jack cheese, cream cheese, mayonnaise, shallot, and garlic to the bowl. Stir until well combined.
  3. Pat the chicken cutlets dry and season them with pepper and salt.
  4. In a large cast-iron or broiler-safe skillet, heat the olive oil over medium-high heat.
  5. Add the chicken cutlets to the skillet and cook for 2 to 3 minutes until browned. Flip and cook for an additional minute.
  6. Top each chicken cutlet with the spinach mixture, spreading it evenly.
  7. Sprinkle the grated Parmesan cheese over the spinach topping.
  8. Place the skillet under the broiler and broil for 2 to 3 minutes, or until the chicken is cooked through (165°F) and the topping is golden brown.
