Cheesy Spinach Chicken Skillet
Delicious cheesy spinach chicken skillet perfect for a quick and healthy dinner.
Ingredients
- 1 (10 ounce) package frozen spinach, thawed
- ½ cup chopped canned artichoke hearts, rinsed
- ½ cup shredded Monterey Jack cheese
- 2 ounces reduced-fat cream cheese, softened
- 2 tablespoons mayonnaise
- 1 tablespoon minced shallot
- 1 large clove garlic, grated
- 1 pound chicken cutlets
- ½ teaspoon ground pepper
- ⅛ teaspoon salt
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons grated Parmesan cheese
Instructions
- Squeeze as much water from the thawed spinach as possible, then place it in a medium bowl.
- Add the artichoke hearts, Monterey Jack cheese, cream cheese, mayonnaise, shallot, and garlic to the bowl. Stir until well combined.
- Pat the chicken cutlets dry and season them with pepper and salt.
- In a large cast-iron or broiler-safe skillet, heat the olive oil over medium-high heat.
- Add the chicken cutlets to the skillet and cook for 2 to 3 minutes until browned. Flip and cook for an additional minute.
- Top each chicken cutlet with the spinach mixture, spreading it evenly.
- Sprinkle the grated Parmesan cheese over the spinach topping.
- Place the skillet under the broiler and broil for 2 to 3 minutes, or until the chicken is cooked through (165°F) and the topping is golden brown.
