Spicy Creamy Shrimp Pasta

Ingredients
- 8 oz pasta
- 3-4 oz shrimp, peeled and deveined
- 3-4 tbsp cream cheese
- 1 cup spinach
- Handful basil leaves
- 1 small tomato, chopped
- 2 garlic cloves, minced
- 1/2 cup milk
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1/3 cup shredded mozzarella
- Salt and black pepper to taste
Instructions
- Cook the pasta according to package instructions, adding a pinch of salt. Drain once done.
- While the pasta is cooking, wash and chop the spinach, prep the shrimp, chop the basil leaves, and the tomato, and mince the garlic.
- In a large pan over medium-high heat, add 1 tbsp olive oil, shrimp, spinach, and 1 minced garlic clove. Stir for 1-2 minutes and add lemon juice.
- Pour in the milk and add cream cheese, stirring until combined. Let it cook for about 1 minute to thicken.
- Add the drained pasta into the pan, mixing well to coat it in the sauce.
- Stir in the basil, chopped tomato, remaining olive oil, and the other minced garlic clove.
- Turn off the heat, sprinkle shredded mozzarella on top, and allow it to melt.
- Stir, taste, and season with salt and pepper as needed. You may need extra salt.
- Serve hot, optionally topped with parmesan cheese.
