Ingredients

  • 8 ounces whole-wheat rotini
  • 1 (5 ounce) package baby spinach, roughly chopped
  • 4 ounces reduced-fat cream cheese, cut into chunks
  • ¾ cup reduced-fat milk
  • ½ cup grated Parmesan cheese, plus more for garnish
  • 2 teaspoons garlic powder
  • ¼ teaspoon ground pepper
  • 1 (14 ounce) can artichoke hearts, rinsed, squeezed dry and chopped

Instructions

  1. Bring a large saucepan of water to a boil and cook the pasta according to package directions. Drain and set aside.
  2. In the same saucepan, combine spinach and 1 tablespoon water over medium heat. Cook, stirring occasionally, until just wilted, about 2 minutes. Transfer to a small bowl.
  3. Add cream cheese and milk to the pan, whisking until the cream cheese is melted.
  4. Stir in the Parmesan, garlic powder, and ground pepper. Cook while whisking until the mixture thickens and bubbles.
  5. Drain any excess liquid from the cooked spinach. Stir the spinach, artichokes, and cooked pasta into the sauce. Cook until heated through.
