Steamed Artichokes with Herb Aioli

Ingredients
- 4 large artichokes (about 2 1/2 pounds)
- ½ cup mayonnaise
- 1 ½ tablespoons chopped fresh herbs (chives and/or parsley)
- 1 ½ teaspoons lemon juice
- ¾ teaspoon Dijon mustard
- 1 small clove garlic, grated
- ⅛ teaspoon salt
- Pinch of ground pepper
Instructions
- Cut off the top inch of leaves from each artichoke.
- Remove the outer layer of small, tough leaves from the stem end.
- Snip all remaining spiky tips from the outer leaves and discard the stems.
- In a large pot fitted with a steamer basket, bring 2 inches of water to a boil.
- Add the prepared artichokes to the pot, cover, and steam until tender, about 30 to 35 minutes, adding more hot water as necessary.
- While the artichokes are steaming, whisk together the mayonnaise, chopped herbs, lemon juice, Dijon mustard, grated garlic, salt, and pepper in a small bowl.
- Serve the steamed artichokes warm with the herb aioli on the side.
